This easy to prepare healthy pasta salad will help sneak more vegetables into your kids. Rich in vitamins C, A, K, and folate, in addition to iron, magnesium, selenium and potassium. Pair this scrumptious salad with a cup of milk and a side of edamame or another protein for a complete meal.

1/2 a box of pasta cooked according to the directions.
2 medium tomatoes diced
1 cup frozen corn
2 celery stalks chopped
2 carrots chopped into small pieces
1 tablespoon chopped onions
2 tablespoons fresh parsley chopped
Juice of one lemon squeezed
2 table spoons olive oil
Salt to taste

Serves: 6

Put corn into large bowl add the rest of the vegetables and pasta once it has cooled. Mix vegetables together with lemon, olive oil and salt. Your salad is ready, now time to enjoy!
