This easy recipe takes chicken nuggets to a whole new level;
not only will your children be begging for more but everyone else too.

Marinating the chicken breasts adds an extra zing but it is
not essential.  If you are tight for time,
skip the marinade.

Ingredients:  Makes four servings.

3 chicken breasts

Juice of one lemon

2 cloves of garlic crushed

2 tablespoons of olive oil

1 tablespoon balsamic vinegar

2 tsp salt

1 tsp pepper

1 cup flour

1 cup bread crumbs

2 eggs


Wash and cut the chicken breasts to the size you
prefer.  Now put the chicken breast into
a deep dish and add garlic, lemon, olive oil, salt, pepper and balsamic vinegar
to marinate the chicken for a couple of hours until you are ready to bake the
chicken nuggets.

Preheat the oven to 400 degrees Fahrenheit. While the oven
is heating mix the flour, bread crumbs with a touch of salt and pepper.  Put the eggs in a bowl add ¼ cup of cold
water then beat the eggs and the water together.  Now it is time to bread the chicken.  It is important to bread them twice.  Put the chicken pieces in the eggs first then
put the chicken in the bread crumbs and make sure to cover the chicken
completely with the breading.  Now put
the breaded chicken back in the egg then rebread it and put it on a non stick
baking sheet. 

Once all the nuggets are breaded and on the baking sheet,
bake the chicken nuggets for 15-20 minutes until the breading is a golden
brown.  Now your kids can enjoy chicken
nuggets and you can rest assure they had clean, healthy food.

Save some time:
Use your George Foreman to grill the nuggets.  They do not look as nice because they don’t get golden brown but they taste the
same and you save electricity by heating just the George Foreman not the whole
oven and it takes 10 minutes for them to cook not 20.
